Espresso is where coffee science and craft converge. The "perfect" shot is not a single recipe but a moving target — bean origin, roast date, grind size, dose, water temperature, pre-infusion, and pressure all interact.

Modern roasters and baristas obsess over extraction yield (typically 18–22%) and total dissolved solids (TDS, around 8–12% for traditional espresso). Hit those numbers and you'll usually land somewhere delicious; miss them and you'll get sour or bitter cups no amount of milk can save.

The good news: you don't need a $10,000 machine to chase quality. A consistent grinder, fresh beans within three weeks of roast, and a scale will get you 80% of the way there. The remaining 20% is muscle memory.
